3 Pepper Steak w/ Rice
Ingredients:
1 lb sirloin steak
1/3 cup vegetable oil
1 teaspoon salt
2 medium green peppers, cut in 1-inch pieces
2 medium red peppers, cut in 1-inch pieces
2 medium yellow peppers, cut in 1-inch pieces
1 large onion, cut into 1 inch strips
1/2 teaspoon garlic powder
1 cup beef broth
2 1/2 tbls cornstarch
1/3 cup water
1 tablespoon worchestershire sauce
1 box rice
Preparation:
Slice steak diagonally into very thin slices and cut into 2-inch long strips.
Brown meat in hot oil.
Add salt, onion, garlic and peppers, and cook for about 5 minutes.
Add beef broth and let simmer on low for about 30 minutes
Mix cornstarch, water and worchestershire sauce until smooth.
Add to meat and stir until broth thickens.
Serve over hot rice.

Sesame Beef?
Sesame Beef
Ingredients:
Meat:
1/2 tsp minced ginger
1 lb flank steak
1/4 cup peanut oil
Marinade:
1 tbls rice wine
1 tsp sugar
1 tbls cornstarch
1 tsp baking powder
2 tbls sesame oil
1 tbls soy sauce
Sauce/Topping:
1 tbls sesame seeds
2 tsp hot bean paste
2 tsp hoisin sauce
1 tbls oyster sauce
small bundle scallions, cut in thin slices
Preparation:
Mix together all of the marinade ingredients.
Slice the beef across the grain into very thin, diagonal pieces and marinate for
about half an hour. Don't marinate too long.
Heat the wok and add enough oil to coat the wok and saute the ginger.
Stir-fry the beef in batches so the wok doesn't cool down.
Reduce the heat and add the sauce/topping.
Stir around until everything is mixed and heated evenly.
Serve over cooked rice.

Steak Wraps
Ingredients:
1-1/2 lbs round steak
1 cup A 1 Steak Sauce
1/2 cup minced onion
2 cloves garlic, minced
2 tsp. hot pepper sauce
Red and Yellow Peppers, cut into slices and cooked until soft
8 Flour Tortillas
small bundle scallions, cut in thin slices
Preparation:
Mix 1/2 cup of the steak sauce, onion, garlic and hot pepper sauce. Save other 1/2 cup of
A 1 sauce.
Grill or broil steak for approximately 5 minutes on each side or until browned,
turning and brushing occasionally with steak sauce mix.
Cut steak into thin strips and mix with the peppers and leftover steak
sauce.
Place steak mix on each tortilla, roll and serve.
Mexican style grated cheese can be used as a topping

Spiced Apple Pudding
Ingredients:
9 large tart apples
1/4 cup apple juice
1/4 cup maple syrup
1/2 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1/8 teaspoon grated nutmeg
1/2 cup dark brown sugar
1 teaspoon lemon rind
1 teaspoon butter
Topping:
1 3/4 cups flour
1 teaspoon sugar
1 teaspoon baking powder
1/4 teaspoon salt
1/2 teaspoon cinnamon
6 teaspoons cold butter
1 cup milk
1 egg
Preparation:
Preheat oven to 375 degrees.
Butter a 9 by 13 inch baking dish.
Peel large tart apples, core, slice and
layer slices in bottom of dish.
In a bowl, combine apple juice, maple syrup,
ground cinnamon, ground cloves, grated nutmeg, dark brown sugar, and lemon rind.
Pour the mixture over apples.
Spot the surface with butter.
Topping:
In a mixing bowl, combine flour, sugar, baking powder, salt, and cinnamon. Add cold butter
and process to a coarse meal.
Stir in milk.
Drop dough onto apple filling.
Brush with a beaten egg.
Bake 40 to 45 minutes or until soft in the
center.

Crazy Horse Loved Custard!
Baked Indian Pudding
Ingredients:
1/2 cup yellow cornmeal
4 cups whole milk, hot
1/2 cup maple syrup
1/4 cup light molasses
2 eggs, slightly beaten
2 tablespoons butter or margarine, melted
1/3 cup brown sugar, packed
1 teaspoon salt
1/4 teaspoon cinnamon
3/4 teaspoon ginger
1/2 cup whole milk, cold
Preparation:
Preheat oven to 300 F.
In top of double boiler, slowly stir cornmeal in hot milk.
Cook over boiling water, stirring occasionally for approximately 20 minutes.
Lightly grease 2-quart baking dish (8 1/2" round).
In small bowl, combine rest of ingredients, except cold milk; stir into cornmeal mixture;
mix well.
Turn into prepared dish; pour cold milk on top, without stirring.
Bake, uncovered, 2 hours, or just until set but quivery on top and do not over bake.
Let stand 30 minutes before serving.
Serve warm, with vanilla ice cream or light cream.

An Autumn Dessert!
Pumpkin Cake
Ingredients:
2 cups sugar
1 cup vegetable oil
4 large eggs
2 cups all-purpose flour
2 teaspoons baking soda
2 teaspoons ground cinnamon
1/2 teaspoon ground ginger
1 teaspoon baking powder
1/2 teaspoon salt
2 cups pumpkin puree or cooked mashed pumpkin
cream cheese frosting, recipe below
1/2 cup chopped pecans
Preparation:
Combine sugar, vegetable oil, and eggs in a
large mixing bowl and mix well.
Sift dry ingredients into a separate bowl and stir into oil mixture, beating well.
Stir in pumpkin puree.
Pour batter into two greased and floured 9-inch round layer cake pans.
Bake at 350F for approximately 40 minutes.
Turn out onto racks to cool.
Frost pumpkin cake with cream cheese frosting and sprinkle with chopped pecans.
Cream Cheese Frosting:
1/4 cup butter
1 package (8 ounces) cream cheese, room temperature
1 pound confectioners' sugar, sifted
2 teaspoons vanilla extract
Combine all ingredients in large mixing bowl and beat well until smooth. (Makes enough for
a 2-layer pumpkin cake.)

Boston Baked Corn
Ingredients:
1 c Ketchup
2 tb Brown Sugar
1 ts Dry Mustard
1/2 ts Salt
1 sm Onion, chopped
3 c Fresh Corn
3 sl Bacon, diced
Preparation:
Preheat oven to 350 deg.
Grease a 1-1/2 quart casserole dish.
Mix ketchup, brown sugar, dry mustard and salt; stir in remaining ingredients, except
bacon, until well blended.
Transfer to casserole dish and top with bacon; bake until bacon is cooked through, about
40 mintues.

Blue Moon Cheese Sandwich
Ingredients:
2 cups grated sharp New York State cheddar cheese
1/3 cup chili sauce
3/4 cup mayonnaise
1/2 cup chopped stuffed olives
1/2 cup chopped pecans
1 teaspoon Worcestershire
Preparation:
Mix all ingredients together well and chill
before using.
Trim white or whole wheat bread and spread with mixture.
Cut into 3 strips.
Refrigerate until serving.
Also good molded and served with cocktail crackers.

Southern Knock-Out!
Black-Eyed Pea Soup
Ingredients:
1 pound fresh or frozen black-eyed peas
1/2 cup chopped green bell pepper
1/2 cup chopped red bell pepper
1/2 cup chopped celery
1 cup chopped onion
8 cups chicken and ham stock
1 tablespoon minced fresh basil, or 1 teaspoon dried basil
2 bay leaves
Salt and freshly ground black pepper to taste
1 cup fresh tomatoes, peeled, seeded and chopped, for garnish
Preparation:
Place the peas, onions, peppers, celery,
basil, bay leaves, and stock in a large pot and bring to a boil over medium-high heat.
Reduce the heat to low, cover the kettle and simmer for 1-1/2 hours, until the vegetables
are soft.
Add salt and pepper to taste.
Garnish with tomatoes.

Bully Pudding
Ingredients:
1 cup sugar
2 eggs
1/4 cup butter
1 teaspoon flour
1/2 teaspoon baking powder
1 cup milk
1 cup chopped dates
1 cup chopped nuts
Preparation:
Mix ingredients like a cake, adding dates and
nuts last, on top.
Add extra 1/2 teaspoon flour over the top of the dates and nuts.
Bake in casserole 40 minutes at 300F.
