Jamaican Rock Buns

Ingredients:
1/2 lb plain flour
3 oz butter
3 oz granulated sugar
4 oz raisins or 1 cup grated coconut
2 teaspoons baking powder
1 medium egg
1 teaspoon cinnamon
1 teaspoon vanilla essence or lemon
1 oz candied peel (citron)
Milk to mix

Preparation:
Preheat oven to 350 degrees.

Rub together butter and sugar with fork.

Add beaten egg and essence.

Stir in flour, baking powder, raisins or coconut and candied peel.

Mix in a little milk, if needed.

Roll into buns and bake in a moderate oven until done.

Careful, Don't Burn Your Banana!

Baked Barbecue Bananas

Serves 10

Ingredients:
10 bananas, unpeeled
Single cream
Brown sugar
Lime or lemon quarters

Preparation:
Place the bananas on the grid close to the heat and packed closely together.

Let them cook until the side nearest the charcoal is black, turn over and cook again on the other side.

It should take about 10 minutes each side.

When the skins are thoroughly black and the banana inside really hot, put one on each plate and peel the top segment of the skin back carefully so that you have a canoe of skin full of banana.

Sprinkle brown sugar along the top and a squeeze of lime or lemon, pour a little cream over it and eat with a teaspoon.

The hot sweet banana, crunchy sugar, sharp citrus and cool cream make an unforgettable combination and a wonderful end to a smashing barbecue party.

Ham & Raisin Gravy

Old Fashion Baked Ham
Ingredients:
5 lb Precooked ham
1 can Pineapple slices, 8oz
1/2 c Brown sugar, packed
1/4 ts Cloves, ground
1 ts Dry mustard
1 tb Vinegar
Maraschino cherries

Preparation:
Drain pineapple and save 2 tablespoons juice. Set aside.

Place ham in oven and bake at 350F for 30 minutes.

Mix brown sugar, cloves, mustard and vinegar in a small bowl and stir in the saved pineapple juice.

Score ham and place pineapple slices and cherries on top of ham. Spoon glaze over fruit and ham.

Bake for another 40-45 minutes, while basting occasionally.

Raisin Sauce
Ingredients:
1 cup raisins
1 cup warm water
1 cup orange juice
1 cup orange marmalade
1/4 cup white sugar
2 tablespoons cornstarch
1/4 teaspoon salt
1 pinch ground cloves

Preparation:
In a small saucepan, combine raisins, water, orange juice and marmalade.

Bring mixture to a boil over medium-high heat.

In a bowl, stir together sugar, corn starch, salt and cloves.

Slowly pour into raisin mixture, stirring constantly.

Continue cooking and stirring until mixture thickens.

Stuck A Feather In His Hat And Called It Macaroni Chicken Salad!!

Pennsylvania Style Macaroni Chicken Salad

Serves enough

Ingredients:
1 package small elbow macaroni
1 cup peas, cooked and cooled
1/2 cup chopped olives
1 1/2 cup mayonnaise
1 1/2 cup sour cream
4 hard cooked eggs chopped
1/4 cup lemon juice
3 Tablespoons prepared mustard
1 Teaspoon salt
1/4 Teaspoon pepper
4 cups cooked cubed chicken
2 medium sized onions grated
2 cups finely chopped celery
Paprika

Preparation:
Cook the pasta following the directions on the package, drain and place into a large bowl.

Stir together the mayonnaise, sour cream, eggs, lemon juice, mustard, salt and pepper into a medium size bowel. Spoon the dressing over the pasta, add the chicken and toss to blend well.

Cover and refrigerate until ready to serve up to 3 hours. Add more Mayo and sour cream just before serving if the salad is to dry. Slice a boiled egg over it and sprinkle with paprika.

When The Moon Hits Your Eye Like A Milk Chocolate Pie, That's Amore!

Milk Chocolate Pie

Ingredients:
1 cup milk chocolate chips.
½ cup milk, divided
1 package (3 ounces) cream cheese, softened
1 carton (8 ounces) frozen whipped topping, thawed
1 chocolate crumb crust (9 inches)
Milk chocolate kisses and additional whipped topping

Preparation:
In a microwave or double boiler, combine chocolate chips and ¼ cup milk.

Cook until chips just start to melt, then remove from heat and stir until melted.

In a mixing bowl, beat cream cheese and remaining milk until smooth.

Gradually beat in the chocolate mixture.

Fold in whipped topping. Pour into crust.

Freeze for 4-6 hours or overnight. (May be frozen for up to 3 months.)

Remove from freezer 10 minutes before serving and garnish with kisses and whipped topping before serving.

Potato Burgers

Ingredients:
1 lb. ground beef
1 cup potato, grated
1 egg, beaten slightly
1/2 cup milk
1 sm. onion, finely chopped
1-1/2 tsp. salt
1/4 tsp. pepper
2 tbsp. butter

Preparation:
Combine meat, potato, onion, seasonings, egg and milk.

Shape into patties.

Cook in hot butter until brown on one side.

Turn and cook on other side until patties are cooked through and browned.

Lentils, Rice and Chickpeas

Serves 4 to 6

Ingredients:
3/4 cup lentils
1/2 cup rice
2 cups water
2 teaspoons ground cumin
2 cups tomato sauce
1 teaspoon salt
3 tablespoons olive oil
1 large onion, thinly sliced
1 medium onion, finely chopped
4 large cloves garlic
Several good grinds of black pepper
1 small bunch fresh mint leaves, finely chopped, or 2 tablespoons crushed dry mint
2 cups cooked or canned chickpeas, drained
Good handful of flat leaf parsley leaves, finely chopped
Plain yogurt, for garnish

Preparation:
Combine the lentils, rice, and water. Bring to a simmer; then cover and cook over low heat for about 20 minutes, until all the liquid has been absorbed. Remove from the heat and let stand, covered.

Heat oil in a medium saucepan and sauté the sliced onion over moderate heat, stirring occasionally, until the onion is golden brown. Remove the onion from the pot, saving as much oil as possible. Set the onions aside.

In the same saucepan, saute the chopped onion and the garlic in the remaining oil, stirring, until the onion wilts and just begins to turn golden. Stir in the cumin.

Add the tomato sauce, salt, pepper; mint, and chickpeas, then add the reserved lentils and rice. Mix well, then cook, stirring occasionally, over low heat for 15 to 20 minutes. Just before serving, stir in the parsley.

Serve hot, garnished with the reserved caramelized onions, and pass the yogurt.

This dish will thicken considerably the longer it sets. If you need to thin the mixture, add some water and adjust the seasoning as necessary. .

Dump Cake

Ingredients:
1 box white cake mix (unprepared)
2 large cans cherry pie filling
2 cans crushed pineapple (drained)
1 cup shredded coconut
1 cup melted butter
1 cup walnuts

Preparation:
Spread the cherry filling on the bottom of an ungreased cake pan.

Spread the crushed pineapple on top of cherry filling.

Dump the unmixed cake mix on top of that.

Pour the melted butter on top.

Dump the coconut and nuts on as a top layer.

Bake at 350 for 45 minutes to 1 hour or until golden brown and bubbly on the sides.

This Bread Is Eggcellent!!

Egg Crostini

Makes 16 crostini
Preparation: 8 minutes
Cooking: 5 minutes

Ingredients:
6 hard-cooked eggs, peeled and chopped
2 tbsp drained sweet relish
2 tbsp ranch-style salad dressing
Salt and pepper, to taste
4 (5-inch) Italian-style rolls
1 cup chunky herb and garlic pasta sauce
Shredded cheese, for garnish

Preparation:
Blend together eggs, relish, salad dressing, salt and pepper. Set aside.

Cut rolls in half lengthwise. Cut each half crosswise into 2 pieces.

Toast cut sides.

Spread 1 tbsp pasta sauce over each toasted bread piece.

Spoon 1 rounded tablespoon egg mixture on top.

Garnish with shredded cheese.

Broil until mixture is hot and cheese is melted, about 3 minutes.

Serve warm.

Apples, Pizza, Pumpkin Pie, Who's Not Ready Holler I !

Apple Pizza

Time: 1 hour 10 minutes (25 min prep, 45 min cooking)
Makes 10 servings

Ingredients:
pastry for double-crust pie
6 medium apples
1/2 cup flour
1/2 cup brown sugar
1/2 teaspoon cinnamon
1/4 cup butter
1/2 cups powdered sugar
milk
1 teaspoon caramel flavoring
chopped peanuts

Preparation:
Preheat oven to 350 degrees.

Roll out the pie crust to fit a 12 inch pizza pan, turn under the edges and flute.

Core, pare, and slice apples thinly onto the pie crust.

Combine flour, brown sugar, cinnamon, and butter until crumbly.

Sprinkle over the apples.

Bake for 20-30 minutes .

Remove from oven and cool 15 minutes.

Combine powered sugar, caramel flavoring and milk to make a thin glaze.

Drizzle the glaze over the top of the warm pizza.

Top with chopped peanuts.

Slice and serve.

You may use a caramel dip for fruit instead of the glaze.
